My brother sent me a recipe for tortillas the other day, and since then, I’ve been craving them. So today we got lard and I made a batch. They turned out great!! I’ll definitely make them again. Here they are cooking (click for a larger version):
The plan was to make quesadillas, and those turned out good, too! Here’s mine, filled with beef, tomatoes, onion, spinach and cheese:
Someday soon I’ll make a recipes section and the one for the tortillas will be in there, for sure. Nummy!!

What brand lard did you get?

I bought the only brand available… Armour. It has hydrogenated lard in it but I wanted them so bad I was willing to do it this time. Now I’m on a quest for two things… tortilla flour and pure lard, which gives me an excuse to visit the little ethnic grocery stores we have in the area.

I’m in the same boat lard-wise. The only brand I can find is hydrogenated. There was a flash in the pan when Mom found some pure lard in Green Valley, but by the time we figured out how precious it was, they had sold out and aren’t getting any more.

I made some on Sunday… I rolled them too thin this time and they were good but not the best they could be. I could taste a difference with the new lard – very good! Next batch will be a better test now that I have more practice with the thickness and stove temperature setting (3.75).
