Gratitude Journal No Comments »When Trav got his first new car (our Hyundai Accent, which Bleys is now driving), the first time I drove it I hit a deer. There were 72 miles on the car and I only bumped the deer, but it was over $300 in damage. Yikes!
It’s from the recipe book Trav got when he was on the HCG diet. Yum!
This recipe is for one serving. Scale as needed.
100 grams of very lean steak, chicken or shrimp
1 whole sliced sweet onion
1/2 clove minced garlic
1/2 t. minced fresh ginger
1/4 t. ground coriander
1/8 t. ground cumin
1 shake turmeric
2 shakes pepper
4 shakes sea salt
4 T. water
In a large frying pan, heat 3 T. water over moderate heat. Add the onion and cook, stirring occasionally, until translucent. Add the garlic and ginger and cook, stirring, for 1 minute. Meanwhile, in a small bowl, combine the coriander, cumin, turmeric, pepper, salt and 1 T. water. Add the paste to the onion and cook, stirring, for 1 minute.
Add the meat to the pan and cook, stirring, for 3 minutes. Raise the heat to moderately high and cook to your taste, stirring, about 2 minutes longer for medium rare (beef) or until the meat done.
It’s amazing that people can meet in 9th grade and still be together and happy when they’re retired.
Gratitude Journal No Comments »David, one of the guys from the band “Take Two” that plays at the Elks, is also a Fred Astaire trained dancer, and he’s now giving lessons on Friday afternoons, before the dinner & dance. This week we learned the Foxtrot… the basic step, brush step, promenade and underarm turn. Then we danced a bunch of Foxtrots for practice.
